Apple and Cinnamon Cupcakes | Get That Sugar Fix

Apple and cinnamon are a delicious combination of flavours, perfect for any time of the year! Combining the two into cupcakes is always such a treat and a great way to get that sugar fix.

This recipe makes 12 cupcakes, takes about 20 minutes to prepare and 20 minutes to cook.

Ingredients:

Cupcakes

  • 2 cups plain flour
  • 1 tablespoon baking powder
  • 2 teaspoons ground cinnamon
  • 2/3 cup brown sugar
  • 3 medium Granny Smith apples, peeled and grated
  • 2 eggs, whisked
  • 3/4 cup milk

Cinnamon Buttercream Icing:

  • 1/2 cup butter, room temperature
  • 3 , 3/4 cups icing sugar, sifted
  • 3-4 tablespoons of milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Method:

Cupcakes

  1. Preheat oven to 200 degrees celsius or 180 degrees celsius fan forced.
  2. Line your cupcake trays with paper cupcake cases.
  3. Sift the plain flour, baking powder and cinnamon together into a large bowl.
  4. Stir in the brown sugar and apples until well combined.
  5. Whisk together the butter, eggs and milk until well combined.
  6. Add the wet mixture to the dry mixture and stir until combined. Do not over mix the ingredients.
  7. Spoon the combined mixture into the cupcake pans.
  8. Bake cupcakes for 20 minutes or until golden brown and cooked through.
  9. Once cooked, remove the cupcakes from the oven and leave to cool.

Cinnamon Buttercream Icing:

  1. Use an electric beater to beat the butter in a large bowl.
  2. Add the sugar, one cup at a time, beating in between each addition.
  3. Add in the vanilla and cinnamon.
  4. Add the milk, one tablespoon at a time, beating in between each addition (adding more or less depending on the consistency of the icing)
  5. Beat on medium for 1 minute.
  6. Place icing into an icing bag and ice cupcakes.
  7. Top off the icing with a sprinkle of ground cinnamon and grated apple.
